These biscuit-pops are great fun to give the children on Halloween! Why not make a few extra and hand them out to all of those ‘Trick or Treaters!’
For making about 15 biscuit-pops you’ll need:
For the biscuit lolly:
100g soft butter (or dairy free alternative)
200g caster sugar
300g plain flour (or gluten free alternative)
½ teaspoon baking powder
1 large free range egg
½ teaspoon vanilla extract (…the best you can find!)
15 wooden/or paper lolly sticks
For the decorations icing:
Ready to roll icing
Food colourings
Sugar sprinkles
Icing sugar for dusting
Variations:
To make ‘lightly spiced’ lollies leave out the vanilla extract and add 1tsp of ground cinnamon.
Step 1 – Make the biscuit dough
Start by pre-heating your oven to 180 degrees/gas mark 4.
Sift the flour and baking powder together in one bowl. In another bowl cream the butter and sugar together until pale and fluffy, then gradually beat in the egg. Add the dry ingredients and mix together thoroughly. Add vanilla or cinnamon to flavour your lollies. If your dough looks a little dry you can add a teaspoon of water to bring it together.
Press the dough into a flattened ball shape and wrap in clingfilm or foil. Leave the biscuit dough to chill in the fridge for at least 30 minutes (I make mine the night before!)
Step 2 – Make the biscuit-pops
On a lightly floured surface, roll out the biscuit dough, evenly, to a thickness of your little finger and cut out your spooky shapes!
You can make your biscuit-pops in any shape that you like! There are so many wonderful biscuit cutters available to buy! If you haven’t managed to find the perfect one…why not make your own? You can draw or print out a spooky shape onto a piece of paper and cut it out. This can be used as a template to cut around.
Now it’s time to add the lolly stick. Take the stick and place your fingers lightly on the biscuit. With a twisting movement back and forth, twist the cookie stick into the biscuit.
Place your hand over the biscuit and flip it over by using the parchement paper and lay it on the backside.
Take a small piece of dough and roll it into a sausage shape and flatten it. Lay it over where the lolly stick is (this will help to keep the stick in place). Again use the parchment paper to flip the biscuit over and transfer it to the baking sheet with parchment paper. Bake for about 15 minutes, or until a pale golden colour.
Leave your biscuit-pops to cool completely.
Step 3 – Time to decorate!
Now it’s time to get spooky!!!
Colour your ready to roll icing using your chosen food colourings (just add a little at a time!) roll it out onto a flat surface using a light dusting of icing sugar so it doesn’t stick. Cut out your Halloween shape using the same biscuit cutter (or paper template) that you used to cut out the biscuit dough.
Carefully lift the icing from the surface and moisten the underneath with a little water and stick it onto the biscuit. Add some sugar sprinkles (sticking them on with a little icing sugar mixed with water) or decorate further with different coloured pieces of icing.
If you are giving them as ‘treats’, why not place them in individual biscuit presentation bags (available from most of the big supermarkets now) and tie them with ribbon.
